Easy but classy toaster oven chocolate shortbread cookies
Inspired by a couple of factors -- something to make via toaster oven [have you seen what gas and energy bills are gonna cost this winter???], John likes chocolate AND he also likes shortbread-- I took a recipe for chocolate shortbread and adapted it slightly ---- and it worked.
People, if you need to make a classy gift for someone, or need to contribute to a dessert buffet or afternoon tea, this will impress. The best part is: It's sooooooooooooo easy.
Recipe:
1/2 C. sugar
1 C. flour
1/4 C. cocoa powder
1/2 C. butter (1 stick)
mix dry ingredients together. Cut in butter and work with hands until mixture is crumbly, but holds a ball shape once formed.
pat into a shallow toaster oven pan (ungreased). score with a knife, into 16 pieces.Bake at 325 F for 20-25 minutes, until shortbread is firm.
Remove pan from oven, and cut shortbread along scored lines. Allow to cool for a little while, and remove pieces and cooll completely on cooling rack.
Store in airtight container.
